Cinnamon is an evergreen tree native to Sri Lanka and southern India. Commercially grown in many other countries. Cinnamon is grown by chopping or cutting a 2 year old tree. Then the following year the stump will give off many shoots. These are cut and stripped of the bark. Only the inner bark is used for spice. Cinnamon in Indonesian means sweet wood.
